Ingredients

Units Scale
  • 1 cup rolled oats (use gluten-free if needed)
  • 1/2 cup natural peanut butter (or almond/sunflower seed butter)
  • 1/3 cup honey or pure maple syrup
  • 1/4 cup vanilla protein powder (or collagen peptides)
  • 1/4 cup unsweetened shredded coconut (plus more for rolling)
  • 1/4 cup mini chocolate chips or chopped dark chocolate (optional)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Mix the base: In a large mixing bowl, combine oats, peanut butter, honey (or syrup), protein powder, shredded coconut, vanilla, and salt. Mix until well combined. If using chocolate chips, fold them in now.
  2. Chill the dough: Refrigerate for about 20–30 minutes to make the dough easier to handle.
  3. Roll into balls: Scoop the mixture into 1-inch portions and roll into balls using your hands.
  4. Coat in coconut: Roll each ball in additional shredded coconut until fully covered.
  5. Store or serve: Enjoy immediately or refrigerate in an airtight container for up to 1 week.
