Creamy Spinach Mushroom and Chicken Pasta

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, diced
  • Salt and pepper to taste
  • 8 oz mushrooms sliced (button or cremini work well)
  • 3 cloves garlic minced
  • 2 cups baby spinach packed
  • 12 oz penne or pasta of choice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Optional: red pepper flakes fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through (6–7 minutes). Remove and set aside.
  • In the same skillet, add a splash more oil if needed. Add mushrooms and cook until softened and golden, about 5–6 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  • Add pasta, chicken broth, and heavy cream to the pan. Bring to a gentle boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
  • Stir the cooked chicken and fresh spinach into the skillet. Cook for 2–3 minutes until spinach wilts and everything is warmed.
  • Stir in Parmesan cheese until melted and creamy. Taste and adjust seasoning. Garnish with parsley or red pepper flakes, if desired.

Notes

  • Swap in rotisserie chicken to save time.
  • Use gluten-free pasta and a dairy-free cream alternative to suit dietary needs.
  • Add sun-dried tomatoes or caramelized onions for extra flavor.
  • Leftovers store well in the fridge for up to 3 days and reheat beautifully.
